Green Goddess Mason Jar Salad
Ingredients (Serves 2)
1.6 oz. (45g) dry brown rice
2 servings Green Goddess Salad Dressing (See Recipe)
5.3 oz. (150g) frozen edamame, thawed
0.7 oz. (20g) broccoli, cut into florets
½ cucumber, diced
2 oz. (60g) baby spinach
2 tbsp. hemp seeds
What you need to do:
Cook the rice according to the package directions. Once cooked, drain and set aside to cool to room temperature.
Assemble the salad in a 16 fl oz. (475ml) mason jar in the following order to ensure optimal freshness.
Pour the Green Goddess Salad Dressing into the base of the jar. Add the thawed edamame, followed by the broccoli florets and then the cooled brown rice.
Top the rice with the diced cucumber, then the baby spinach and finish with the hemp seeds on top.
Seal the jar tightly with the lid and refrigerate until ready to serve.
When ready to eat, shake the jar well to distribute the dressing evenly throughout the salad. Divide the contents equally between 2 bowls and serve.
